I think you are getting mixed up...

Sickbeard assumes you have or want a folder for each TV show.
So when you add a show it initially asks you to choose the parent-folder (location) for all the shows. In your case that would be /share/TV Series/ .
If you already have a folder for the show you should pick "Add Existing Show". Sickbeard will then show you all the (Showname) folders in /share/TV Series/ .
If you have episodes already, it's best to put them in the showname folder (or create one) before Sickbeard goes to look for new episodes.
You can also add the episodes later and Re-scan the files in the Show page.

The TV Download Dir is the folder where your download program puts the downloads after unpacking, in other words completed downloads.
Normally this is /share/Complete. You can look this up in your download programs settings.
If a download is put there, Sickbeard will take over and place it in the correct Showname folder.
